- 2 cups kale (roughly chopped curley, not the darker dinosaur variety)
- 1/2 fuji (or any sweet variety apple, peeled, cored and roughly chopped)
- 1 inch fresh ginger (piece of, peeled and grated)
- 1 3/8 cups cucumber (roughly chopped, I used an English cucumber, but if you're using a traditional, peel first)
- 1 tsp. matcha powder
- 1 1/2 cups coconut water
- 2 tsp. maple syrup (to taste, optional)
