- 150 grams mushrooms (cleaned + chopped)
- 300 grams cavolo nero (or red russian kale, if using cavolo nero, strip the leaves from the stalk, for red russian, use the finely chopped stalks too)
- 250 mL red wine
- 1 chicken (ltr hot, or veg stock)
- 2 onions (finely sliced)
- 2 cloves garlic (peeled + chopped)
- 1 Tbsp. fennel seeds
- 50 grams chopped bacon (optional for non veggies)
- 400 grams risotto rice
- balsamic vinegar
- Parmesan cheese (or vegetarian alternative)
