Just made this crustless, with turkey bacon, diced onions & potatoes, sauteed Kale, and a little bit of brie I had left plus the majority of the cheese being mozzarella. I love making quiches! Easy, quick, and makes at least six servings.

I have made this twice...once with bacon (reduced cheese to 1/4 cup) and once with 3 turkey sausage. Both were very good, and the recipe is easy to make. This could also be made with spinach, tomatoes, onions....the egg/dijon is a good base to tailor to your taste.
