- 3 cups kale (packed, washed and dried and cut into small bite-sizes pieces, you want to keep them really small since kale is a rougher raw vegetable; make sure to remove stems and the thick center of the stalk; I used Lacinato kale, curly kale and purple kale)
- 2 cups cooked quinoa (room temperature or chilled; I used red and white)
- 1/2 cup Persian cucumbers (diced, diced into 1/4 inch cubes; 1 persian cucumber yields about 1/2 cup)
- 1/2 cup cherry tomatoes (diced, about 1/4 inch cubes)
- 1/2 cup extra virgin olive oil
- 3 Tbsp. white wine vinegar
- 1 Tbsp. apple cider vinegar
- 3 Tbsp. honey
- 3 Tbsp. lemon juice

I added 1/4 of a red onion and some chives. This was absolutely delicious after sitting in the fridge overnight! Will be adding chickpeas next time.

Delicious! My kids happily ate the kale although I should have reduced the amount of dressing a little esp since my quinoa was a tad over cooked. Added smoked duck for protein and it’s a complete meal

I used a mixture of red (75%) and black quinoa (25%) with Red Kale and Rainbow Cherry Tomatoes. I also used Meyer lemons and orange blossom honey instead.
It came out bomb! 😋

Very nice! I made it with rice instead of quinoa and added some beans, turned out really filling and delicious.

I added green peas, carrots and onions with flavored oil olive and vinegar.
