  • 3 cups kale (packed, washed and dried and cut into small bite-sizes pieces, you want to keep them really small since kale is a rougher raw vegetable; make sure to remove stems and the thick center of the stalk; I used Lacinato kale, curly kale and purple kale)
  • 2 cups cooked quinoa (room temperature or chilled; I used red and white)
  • 1/2 cup Persian cucumbers (diced, diced into 1/4 inch cubes; 1 persian cucumber yields about 1/2 cup)
  • 1/2 cup cherry tomatoes (diced, about 1/4 inch cubes)
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons white wine vinegar
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons honey
  • 3 tablespoons lemon juice

    Very nice! I made it with rice instead of quinoa and added some beans, turned out really filling and delicious.

    loved it! Its easy to go a little heavy on the dressing so add it slowly! Everyone at dinner was a fan! Will be making this again for sure!

    Worked great as a main or side. I agree with other reviewers that the dressing is quite tasty. I cooked the quinoa with a chicken flavoured boullion cube and added some red onion for extra flavour. Will be making this again!

    Delicious. As it was a main course I added finely chopped red onion and red pepper . Served with garlic bread

    Was really tasty. Perfect on a scorcher of a day. Added in some watermelon and cilantro too. Tasted amazing!!
