Description
Korean barbecue is bomb, we can’t get enough! Call it kalbi, call it galbi, same diff, it’s delicious. These short ribs are marinated in a medley of sweet, salty, and tart flavors. They get grilled in a flash and the caramelization is scrumptious. Riding sidecar is a quick pickle mixture that’ll have you puckering with delight. Grilling the meat, pickling the veg, and wrapping it in crispy lettuce makes this dish a perfect healthy recipe for any night of the week. No guilt, minimal mess, flavor bomb, you can’t go wrong. So crank up some K-pop and rock out these ribs tonight!
Ingredients
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. mirin
- 1/4 cup soy sauce
- 4 Tbsp. sugar
- 2 Tbsp. chili garlic paste (technically gochujang)
- 2 short ribs (about 1 lb.)
- 1 cucumber
- 1/2 carrot
- 1/4 red onion
- 1/4 cup apple cider vinegar
- 6 leaves lettuce (large leaves)
- salt (staple)
Directions
- Heat the pan - Place a grill pan over high heat.
- Bust out a marinade - Grab a large bowl and combine the balsamic vinegar, mirin, soy sauce, sugar, and chili garlic paste, and stir. Remove the bone from the short ribs and cut them into slabs about ½” thick. Place the short rib pieces into your marinade, toss them around, and set aside.
- Quick pickle - Cut your cucumber into ½ moon slices, grate your carrot, slice your onion, and place them all in a bowl. To the bowl, add a pinch of salt, apple cider vinegar, and sugar. Toss it all together.
