- 1 cup tamarind concentrate (preferably Thai Fruit brand)
- 1 Tbsp. fish sauce (preferably Tiparos brand)
- 1 Tbsp. palm sugar (grated)

- 1/4 lb. long beans
- 1 chayote squash (small, cut into 2" pieces about ½" thick)
- 1 daikon (small, about 7 oz., peeled, halved lengthwise, and cut into ½"-thick slices)
- 1/4 napa cabbage (small, sliced 2" thick)
- 8 oz. medium shrimp (about 10, peeled and deveined, tails removed)
