Ok. I’m not a recipe hater. But this was awful and I should have seen it coming. It called for NINE eggs!! I thought that was weird when I was mixing it all together, but I just went with it so I wouldn’t mess it up. They basically tasted like eggs bites. I was pretty disappointed. Also, cause I was making them with my toddler who was VERY excited about muffins and was of course very different than a non-keto muffin. If I try keto blueberry muffins again, it will NOT be with this recipe.
