- 5 chicken wing (drumstick + 5 chicken wing-tips, cut into small pieces, throw in a pork bone if any)
- 2 onions (small, quartered)
- 2 medium carrots (cut into large chunks)
- 1 celery stick (large rib of, cut into large chunks)
- 1 whole garlic (head of, cut in half horizontally)
- 6 sprigs thyme
- 1 Tbsp. rosemary leaves
- 2 fresh bay leaves (or 4 dry bay leaves)
- 1 tsp. ground white pepper
- 1/2 tsp. smoked paprika
- 1/2 tsp. freshly ground black pepper
- 1 1/2 Tbsp. unsalted butter
- 2 Tbsp. flour
- 3 Tbsp. cognac (or brandy)
- 4 cups low sodium chicken stock
- 1 cup low sodium beef stock (I like the combination of chicken/beef stock but if chicken stock is all you have, you can use 5 cups of chicken stock instead)
- 1 tsp. dark soy sauce (super)
- 3 Tbsp. heavy cream
- salt
- black pepper
- white pepper
- 1 Tbsp. unsalted butter
- 2 Tbsp. all purpose flour
