- 2 cups rice (uncooked, I used basmatic)
- 8 oz. tomato sauce (Canned puree)
- 3 cups chicken stock (or Water.)
- 1/2 tsp. chicken bouillon
- 1 tsp. salt
- 1 tsp. paprika
- 1 tsp. white pepper
- 1/2 lb. carrots (or more vegetables, peas, green beans)
- Scotch Bonnet pepper (or hot pepper optional)
- 7 1/2 lb. chicken thighs (about 5-6)
- 2 tsp. salt
- 2 tsp. onion powder
- 1/2 tsp. dried thyme (or oregano)
- 1 tsp. garlic powder
- 1 tsp. smoked paprika
- 1/2 tsp. white pepper
- 1/2 tsp. cayenne pepper
- 1/2 tsp. chicken bouillon powder (you may replace with salt)

I could not find bonnet peppers, used habanero peppers instead. I think 5-6 thighs including 2 cups of rice is a bit too much for the cooking time the recipe called for -- my chicken was undercooked and on the flip side my rice was overcooked mush. I will try again, but maybe cook the rice separate from the chicken and cook only 2 thighs instead.
