  • 10 cups cold water
  • 8 tablespoons seasoned salt (Lawry's®, divided)
  • 2 1/2 tablespoons garlic powder (Lawry's®, with Parsley)
  • 3 tablespoons red pepper (McCormick®, Ground, divided)
  • 5 pounds chicken wing (pieces)
  • 4 cups flour
  • canola oil (for frying)
  • 1 stick unsalted butter (melted)
  • 4 tablespoons hot sauce
  • 2 tablespoons honey
  • 3/4 teaspoon kosher salt (optional)

    Directions

    1. Mix water, 6 tablespoons of the seasoned salt, garlic powder and 2 tablespoons of the red pepper in large container or 2-gallon resealable plastic bag. Add chicken; cover container or seal bag. Refrigerate at least 4 hours or overnight for best flavor.
    2. Mix flour and remaining 2 tablespoons seasoned salt and 1 tablespoon red pepper in large bowl until well blended. Remove wings from brine. Discard any remaining brine. Coat wings, a few pieces at a time, with seasoned flour.
    3. Pour oil into large deep skillet or Dutch oven, filling no more than 1/3 full. Heat to 360°F on medium heat. Add wings in batches to hot oil. Fry 10 to 12 minutes per batch or until golden brown and crispy, turning once. Drain on paper towels.
    4. Mix butter, hot sauce and honey in a large bowl until well blended. Season with kosher salt to taste, if desired. Add cooked wings; toss to coat.
