Spicy Jamaican Jerk chicken breast complimented perfectly with a delicious fresh-from-scratch guaca-salsa on a bed of arugula with a side of - perfect for if you love fresh spicy food with a big POP of flavor! Adjust the salsa recipe according to your love for heat, enjoy with a side of stir-fried mild and hot peppers, the spiciness of which is cooked down to allow you to enjoy the basic flavor of the peppers without sweating bullets.

- 2 chicken breasts (large)
- 2 Tbsp. jamaican jerk seasoning (Walkerswood Hot, or alternate Jerk seasoning)
- 1 avocado
- 1 mango
- 1 yellow onion (large)
- 4 jalapeno peppers
- 3 cloves garlic
- 1 ear of corn
- 2 limes
- 1 cup fresh cilantro
- 1 habanero pepper (optional)
- 4 bell peppers (1 yellow, 1 red, 1 green, 1 orange- substitution ok)
- 2 peppers (large hot hatch, Italian long hots can be substituted)
- 1 poblano pepper (large)
- 1 tomatillo
- 4 cups arugula (fresh)
- 2 Tbsp. olive oil
- 1/8 Tbsp. ground pepper
- 1 pkg. black beans (& rice, optional)

Directions
- First jerk the chicken- Put 2 tablespoons Jerk Seasoning into bowl, apply with a bristle basting brush
- Let sit for 30 minutes
- Then make the salsa- Boil some water, shuck ear of corn and cook in pot of boiling water for approx. 10 minutes
