- 480 grams carrots (julienned)

- 1/4 cup soy sauce
- 1 Tbsp. tomato paste
- 2 Tbsp. maple syrup
- 1 Tbsp. rice vinegar

- 1/2 tsp. white pepper (recommended, but I used black)

i had some leftover whole wheat linguine w/vegan spicy Italian sausage and pepper and Italian tomato sauce. it wasn't enough for dinner and wed just bought a bottle of Tyku sake. wanting something that would pair well w/the sake, i found this recipe. I made it using veggies I had (4 Swiss chard leaves, 12 curly kale leaves, 1 zucchini, thinly sliced and some thinly sliced fennel. made the sauce and added it to the veggies, as directed. Then i reheated the sausage and peppers and mixed all of that into the veggies> using the linguine as their place of the soba noodles. It was amazing
