- 8 cups chicken stock (Rich or store-bought)
- 1 Tbsp. fresh ginger (Finely julienned, peeled)
- 1/2 cup carrots (Thickly sliced coins)
- 1/2 cup snow peas (Trimmed and cut on the diagonal into ½-inch pieces)
- 1/2 cup brown mushrooms (Small, thinly sliced)
- 2 Tbsp. white miso
- 1/2 Tbsp. soy sauce (To taste)

A very easy to recipe to make. The longest part was waiting for the broth to get to boiling! For the Udon noodles I went as instructed on package. The package has 3 servings with each bundled up with paper wrap. Very nice. Got the water boiling, put noodles in and immediately turn heat down to low. I've never done that with regular pasta but this I did. The water stopped boiling and let it sit for 13-14 mins per package. The noodles came out perfectly. I wanted to rinse them in ice water but my ice machine is out so settled for cool tap water. Everything came out good and my picky wife slurped her bowl clean! Marukome is the brand Miso broth concentrate I used, original. Welpac is the brand of Udon noodles used. I will definitely experiment with this recipe as my base. Enjoyed it very much!
