- 2 lb. beef (2 inch cubes, chuck, flank, round, any braising cut)
- 4 Tbsp. coffee (brewed strong)
- salt (as needed)
- 3 Tbsp. oil
- 2 onions (large, sliced)
- 2 Tbsp. minced garlic
- 1 Tbsp. ginger (grated)
- 2 carrot (large, rangiri cut, uneven oblique chunks)
- 2 potatoes (large, rangiri cut)
- 3/4 cup peas
- 2 tsp. garam masala
- 2 cups beef stock (water can be used but the depth of flavour will be lacking)
- 3 cups water
- 2 tsp. brown sugar (or palm sugar)
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 Tbsp. turmeric
- 1/2 Tbsp. coriander powder
- 1/2 tsp. ground cumin
- 1/8 tsp. ground fennel
- 1 tsp. chilli powder
- 1/8 tsp. ground black pepper
- 1/8 tsp. ground cinnamon
- 1/8 tsp. garlic powder
- 1/4 tsp. cocoa powder
- 1 pinch ground cloves
- 1 pinch ground cardamom
- 1 1/2 tsp. tomato paste (or ketchup)

A great recipe, plenty of spices for a curry, and I would definitely recommend this for the serious curry person, the only downside is there is so many steps to do, so patience is a must to execute this recipe perfectly to get the results required from the photo provided.

Delicious. I didn't have coriander powder so I used what I did have, an added a dash of garam masala. Also added some apple chunks and cooked them down into the sauce, and a squeeze of lemon for a bit of acidity. It had a lot of depth of flavor even without cooking meat, onions, potatoes, garlic and ginger in it. (I served it over air fried chicken cutlets and rice with a side of sauteed shredded broccoli sprouts, so I only followed the curry directions.) The spiciness will depend on the type of chili used – I used medium hot Hatch New Mexico red chile and it was a lovely slow heat. As mentioned in another review, this does require some babysitting so not a quick meal for a hungry familly after work, but not too complicated either.

We liked it but it required a lot of vigilance while cooking. Certainly not an after work meal.

Great recipe! I used ground turkey as the protein and skipped the first meat boil step. Next time will sub cayenne for chili powder bc it needed a little more kick for my personal taste
