- 1 white onion (large, halved and peeled)
- 1 stick celery
- 15 grams dried porcini mushrooms
- 2 sprigs fresh rosemary (finely chopped)
- 300 grams risotto rice
- 1/2 white wine (a glass of)
- 1 vegetable stock
- 1 liter boiling water (or stock, we used Marigold swiss bouillon)
- 500 grams mixed mushrooms (wiped clean and torn, we used a mixture of chestnut, shiitake and oyster mushrooms)
- 1 clove garlic (finely chopped)
- 1 bunch thyme leaves (picked)
- 1 knob butter
- 40 grams Parmesan (grated)
- 1/2 lemon
- 1 bunch flat leaf parsley (chopped)
- 100 grams pinenuts (toasted in a non-stick pan)
- 1 Tbsp. balsamic vinegar
- 1/2 lemon
- 200 grams baby spinach (sliced roughly into 1cm thick strips)
- 3 sprigs fresh mint (leaves picked)
- 5 sun-dried tomatoes in oil (roughly chopped)
- 1 cucumber (medium, halved and sliced on an angle about 1cm thick)
