- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 lb. andouille sausage (thinly sliced into rounds)
- 1 white onion (diced, optional)
- 14 oz. crushed tomatoes (1 can,, optional)
- 4 cups chicken stock
- 1 1/2 cups long-grain white rice (uncooked)
- 2 Tbsp. Cajun seasonings (or Creole seasoning)
- 1 tsp. dried thyme (crushed)
- 1/4 tsp. cayenne pepper
- 1 bay leaf
- 1 lb. large shrimp (raw, peeled and deveined)
- 1 cup okra (thinly-sliced)

Surprisingly easy to make! Made both with and without okra (liked without better). Didn’t need to add additional salt or pepper (Tony’s seasoning had enough).

Made it without rice and added linguine so made linguine jambalaya! Added a little rue after the chicken and sausage cooked in order to thicken the sauce up for the linguine! Also added diced tomatoes! Was delicious.

Turned out fantastic! Due to some family members that aren’t fans of spicy foods I kept out the jalapeños and cayenne pepper and cut back on the creole seasoning, but still turned out great

Perfect! It was my 1st time making jambalaya.
Are used cilantro instead of parsley. My daughters were very proud of me they said “you nailed it Dad”!! I will definitely make this again.

Yummm! Fixed without okra as I didn’t have any. Added cornbread for a side.

Absolutely delicious! I added ham instead of chicken. I also added sweet sausages as well as andouille.

Fantastic!! I added corn on the cob and shrimp but did omit the chicken I would have liked more okra too. When I make it again I wouldn’t add the okra as soon as recipe called for also, very important to use LONG grain rice!!!!

Deep and rich flavours. Delicious! Added a few dashes of Worcestershire sauce to enhance it. Definitely add the tomatoes.

My family loved it. We have seafood allergies so we took out the shrimp, and it came out amazing! Easily my favorite recipe that I’ve tried.

‘Tween hubs and I, it’s nearly impossible to come up with recipes that we both like. We both LOVED this one. We had leftovers for days and happily ate every last serving. This is going on repeat!

Just awesome flavor! But to keep the veggies a little bit crisp I will cook the rice separate from now on. DEFINITELY REMAKING!!!

I’ve made this recipe many times and always have been happy with the results. I add some roux to the pot to thicken up the sauce and add to a little more complexity to the taste but it is fine if you leave it out
