  • 3 tablespoons olive oil (divided)
  • 2 celery (ribs, chopped)
  • 1 white onion (diced)
  • 1 red bell pepper (small, cored and diced)
  • 1 yellow bell pepper (small, cored and diced)
  • 1 green bell pepper (small, cored and diced)
  • 2 jalapeno peppers (seeded and finely chopped, *more/less to taste, see note below)
  • 4 cloves garlic (minced)
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 pound andouille sausage (thinly sliced into rounds)
  • 3 cups chicken stock
  • 14 ounces crushed tomatoes
  • 1 1/2 cups white rice (uncooked short grain, you can use brown if you prefer, but you'll need to cook it separately if you do, otherwise it takes significantly longer to cook than white rice!)
  • 2 tablespoons cajun seasoning (**more/less to taste, see note below)
  • 1 bay leaf
  • 1 teaspoon thyme (crushed)
  • 1/4 teaspoon cayenne pepper
  • 1 pound shrimp (peeled and deveined)
  • 1 cup okra (thinly-sliced, optional)
  • salt
  • pepper
  • fresh parsley (optional)
  • sliced green onions (optional)
  • hot sauce (optional)

    ‘Tween hubs and I, it’s nearly impossible to come up with recipes that we both like. We both LOVED this one. We had leftovers for days and happily ate every last serving. This is going on repeat!

    Just awesome flavor! But to keep the veggies a little bit crisp I will cook the rice separate from now on. DEFINITELY REMAKING!!!

    I’ve made this recipe many times and always have been happy with the results. I add some roux to the pot to thicken up the sauce and add to a little more complexity to the taste but it is fine if you leave it out

    Had to alter a lot for family tastes: no okra, no shrimp, beef summer sausage instead of andouille, double the chicken breasts, only 1 jalapeno pepper. Despite all of that, this basic recipe is staying on my hit list. I thought it made enough for two family dinners and a few between meal fillers. Wrong! One meal and a couple of snacks, and done! Next time, I'll double up!!!

    super great recipe, a little spicy for my family though. would definitely cut down on the cayenne if your not a big fan of heat. also make sure to stir every few minutes as the rice WILL stick if you aren't diligent

    So spicy, so good! Would add less of the slap ya mama next time. I also kept the chicken and sausage in the stew as the rice cooked, and used sujuk rather than the Andouille, turned out great!

    Adjusted seasoning to my taste, did not want it overly spicy. Overall it was a great dish my family loved.

    Definitely a new fave for my wife and I! We substituted Kielbasa for Andouille just because it was too far of a drive to buy some. My wife doesnt like too much of a spicy taste so we used half of a jalapeño. We threw in Chicken, Shrimp, and Kielbasa for protein. The recipe listed 7 servings but we were able to get a little over 10 servings out of it. The leftovers are better than when it was fresh and even then it was so good!

    Loved this! I skipped the okra, and instead of cooking the rice in the jambalaya I served this over rice. Fantastic, would make again.

    WOW!!! Totally awesome, this was my first time trying jambalaya, I’ve always heard it was a spicy food... which I don’t do, I decided to give it a try anyway, i didn’t add as much of the cayenne pepper as it called for so it wasn’t as spicy, great flavorful dish, I enjoyed it as well as my family

    It turned out perfectly! Unfortunately I had to use chicken broth instead of chicken stock, but it didn’t make that much of a difference. This dish was very simple and perfect for a chilly fall evening.

    This is my favorite Jambalaya recipe—I’ve been using this recipe long before I had the Yummly app and I’m so glad I was able to find it on Yummly! Over time, I have found that how this recipe turns out can vary greatly depending on the sausage used. My family prefers Johnsonville smoked sausage or Johnsonville Andouille but I have to use less of my homemade Cajun seasoning with the Andouille or it becomes too spicy.

    This recipe is amazing and my whole family loves it. I love that we all are eating tons of veggies with our meal! Sometimes, to make it low carb, we sub half or all of the rice with riced cauliflower and no one has complained at all. ;) We make this recipe once or twice a month.
