- 3 boneless skinless chicken breasts (cut into 1-inch cubes, about 1 1/2 pounds total)

- 8 fingerling potatoes (sliced into 1/4-inch coins)
- 1 cup store bought low sodium chicken stock (or homemade)
- 2 cups full fat coconut milk
- 1 Tbsp. worcestershire sauce
- 1 1/2 tsp. white wine vinegar
- 1 1/2 tsp. hot sauce (such as Grace)
- cilantro (for garnishing, optional)
