- 2 cloves garlic (minced or crushed)
- 3 red chilies (seeded and finely chopped)

- 1 1/2 tsp. dried thyme
- 1 tsp. ground cinnamon
- 1 tsp. ground cumin
- 1/2 tsp. ground allspice
- 1/2 tsp. ground cloves
- 1/2 tsp. ground nutmeg (or mace)
- 3 medium tomatoes (diced)
- 2/3 cup dried quinoa (rinsed)
- 2 1/2 cups vegetable stock
- 1/2 Tbsp. maple syrup (or honey)
- 2 Tbsp. tamari soy sauce
- 1 red bell pepper (seeded and chopped)
- 2 limes (juice from, 4 tablespoons)
- 1/4 cup fresh parsley (chopped)
