- 3 Tbsp. coconut sugar (2-, or maple syrup, plus more to taste)
- 2 Tbsp. coconut oil (melted, or grape seed or avocado oil, plus more for grilling)
- 3 stalks green onions (or scallions, thinly sliced)
- 1 serrano pepper (medium, or habanero, thinly sliced, seeds removed)
- 1 eggplants (large or sub 2 small per 1 large)
- 1/4 cup bbq sauce (vegan, I like Annie's)
- 1 Tbsp. lime juice
- 1 Tbsp. olive oil (or grape seed)
- 1 Tbsp. coconut sugar (or maple syrup)
- 1 tsp. fresh grated ginger
- 1 pinch sea salt
- 1 pinch black pepper
- 1 stalk green onion (thinly sliced)
- 1 pinch cayenne pepper (optional)

It turned out pretty well! I decided not to do the bbq sauce, but the seasoning was really tasty. I definitely would do it again

This recipe is yummy and quick! Definitely make the sauce to go with it; it’s good on its own but even better with the sauce. Made this with a side of grilled chili lime corn. Very summer!
