- 1 Tbsp. molasses
- 1 Tbsp. fresh ginger (grated)
- 2 cloves garlic (minced or grated)
- 2 red bell peppers (diced, or 1 orange and 1 red pepper)
- 1 banana pepper (chopped)
- 1/2 cup fresh pineapple (diced)
- 2 eggs (lightly beaten)
- 3 Tbsp. fresh orange juice
- 1/4 cup soy sauce (use reduce sodium for less salt)
- 1 lime (juiced)

I was nervous as I was cooking this because I wasn't sure how it would all work together but it actually turned out to be pretty good. It basically tastes like a jerk chicken fried rice. I would make it again. I did end up adding a little salt to the chicken but other than that, I followed the recipe.
