- 3 lb. meat (bone-in goat, for stew, about 2-inch chunks)
- 2 onions (medium, chopped medium, about 2 cups)
- 3 cloves garlic (smashed)
- 5 Tbsp. jamaican curry powder (spicy or non spicy)
- 3 Scotch Bonnet peppers (or habañero, seeded and chopped)
- 2 inches ginger (piece of, peeled and minced, about 2 tablespoons minced)
- 1 qt. water (cups, or low-sodium chicken broth)
- kosher salt
- 2 russet potatoes (medium, peeled and cut into 1-inch cubes, about 2 cups)

I added Shrimp to pot when potatoes were done and let simmer til shrimp was cooked. Made curry rice with carrots for side dish and pita bread. Delicious.
