Tasty...next time will add peppers a little later in the cooking time to maintain some crunch. I added squeeze of fresh lemon juice and some fresh parsley, in addition to green beans to boost vegetable content. I ate mine over cauliflower rice. My husband had brown rice. Yum

First time making curry and it turned out really well! Not too hard to make and didn’t involve but one pot!
Absolutely delicious! Served it with coconut rice for a quick and easy weeknight dinner. My Jamaican husband even gave his approval...not an easy task.

It tasted great & it was pretty simple to make. You definitely don't have to be a chef to make this.

Delicious. Made some minor substitutions: didn't use ketchup, added half a habanero, used orange bell peppers for color... I have never been a huge fan of cornstarch sauces, but this was really good.
