- 1/2 tsp. salt
- 2 cups corn kernels
- 2 ears fresh corn
- 1 green onion (medium, thinly sliced)
- 1/2 jalapeño (medium, seeds removed and finely chopped I used my garlic press to mince it)
- 2 Tbsp. vegetable oil (such as canola or avocado)
- 1/2 cup sour cream
- 1 medium lime (zest removed, divided and juiced)
