- 4 Tbsp. cooking oil
- 4 Tbsp. all purpose flour
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1 cup green onions (chopped, or regular onions)
- 1 cup celery (shopped)
- 1 cup green pepper (chopped)
- 29 oz. diced tomatoes
- 14 oz. chicken broth
- 1 cup okra (fresh or frozen sliced, optional)
- 1 cup chopped cooked ham (or chicken)
- 1 cup andouille sausage (sliced)
- 1 tsp. Cajun seasoning (my recipe for Cajun seasoning)
- 1/4 tsp. dried thyme
- 3/4 cup rice (your favorite, long grain, brown, quick-cooking)
- 1 drop hot sauce (or you can add a jalapeno chopped if you want it really hot.)
- 1 1/2 cups shrimp (fresh or frozen)
