- 2 active dry yeast ( packs,or 4 ½ teaspoons)
- 1 1/2 tsp. kosher salt
- 1 1/2 cups milk (warmed not more than 120º F)
- 1/4 cup water (warmed not more than 120º F)
- 2 Tbsp. softened butter (at room temp, plus more for brushing )
- 2 Tbsp. coconut oil
- 1 cup mayonnaise
- 1 Tbsp. jerk seasoning (Walkerswood, or another supermarket Jerk seasoning)
- 10 oz. snapper fillets (gray, or substitute red snapper, mahi-mahi or tilapia)
- olive oil ( for brushing fish )
- salt and ground black pepper ( to taste)
- 1 head green leaf lettuce (separated into leaves and washed )
- 3 tomatoes (ripe, cut into thin slices)

First time making Coco bread and it was great! It was slightly too salty for my taste, but it’s also possible I put too much salt by mistake (I tried to half the ingredients to only make 5 breads instead of 10.) I also used coconut milk instead of cow milk.
Would make a again for sure! Ate mine with bully beef I had left over from a previous dinner this week :)
