- 1 stick melted butter (8 tbsp; or 6 tbsp of melted butter w/ 2 tbsp walnut oil, which is what I used)
- 4 eggs (separated)

Our current favorite dessert! Light and easy to eat we added some additional spices like cinnamon and nutmeg and its an absolute hit!

It is a cake I enjoy making - not difficult. I have made it about four times over the past couple of years and it is a winner with everyone! I usually do it as a dessert offering and pair it with whipped cream with castor sugar and cognac in it. They complement each other. Left overs if any are a great accompaniment to coffee or tea during the day. Two things to watch - when roasting the walnuts be careful they don’t burn. Three minutes in the oven at 200 is enough. Equally, watch the last five minutes of the cake baking to ensure you don’t get a burnt top.

This cake was easy to make and oh so delicious! Breakfast, dessert? Who cares! Yum yum yummy
