- 1 egg (farm fresh, at room temperature, see notes for alternatives)
- 1 tsp. Italian seasoning
- 1/4 cup pepperoncini (chopped, see notes)
- 1/2 tsp. sea salt (or to taste)
- 1 tsp. white wine vinegar (or apple cider vinegar)
- 1/2 tsp. freshly ground black pepper
- 1 Tbsp. Dijon mustard
- 1 cup avocado oil
- 6 leaves red leaf lettuce (or of green, washed and dried)
- 4 slices turkey (or ham,, see notes or leftover rotisseri chicken, etc.)
- 4 slices genoa salami (see notes)
- 2 slices provolone cheese (omit for dairy free and paleo)
- aioli (Pepperoncini, to taste, we like quite a bit, around 2-3 Tablespoons per wrap)
- 5 slices small tomato (from 1)
- 6 slices cucumber
- 1/2 avocado (ripe, thinly sliced, add as much as you’d like)
