Delicious moist meatloaf. My only change was poblano rather than bell pepper. What was in the fridge.

excellent- i used half beef mince, half pork and next time I'd probably top with the cheese for the last 10mins to save it burning, but otherwise a very tasty meatloaf

it turned out great! i used half the ingredients to serve 6 and still a good portion with leftovers
I kept the vegetable portion the same and the sauce and cut down the amount beef and the flavors really stand out.

Very good! Kids and husband loved it! Tried to use canned tomatoes- not a good idea 🙁 will 100% make again!
