- 3 Tbsp. olive oil
- 1 sweet onion (chopped)
- 1 chili pepper (large Cubanelle, chopped – or any larger sweet Italian pepper is good! Bell is fine, too.)
- 1 tomato (large, – I used a huge heirloom – so good!)
- 2 cloves garlic (chopped)
- 15 oz. tomato sauce
- 1/2 cup fresh basil leaves (chopped)
- 2 sprigs fresh rosemary (chopped)

- pepper
- 1 cup shredded romano cheese (+ more for serving)
- 1 Tbsp. sour cream (or crema)
- 1 cup bread crumbs (Italian seasoned is great!)
- 1 baking potato (large)
- 1 tsp. garlic powder
