Salty, briny capers are the perfect complement to tuna and anchovies, while mayonnaise adds a bit of tart creaminess. The best part is you can make these ahead of time and store them in the refrigerator until ready to serve.

- 10 tomatoes (cocktail, depending on size, washed and dried)
- 1 can tuna (in brine)
- 4 anchovy fillets (in oil)
- 1/2 tsp. capers
- 4 Tbsp. mayonnaise

Directions
- Cut off the top of the tomatoes, and set the tops aside.
- Gently scrape out the tomatoes, being careful not to pierce the bottom.
- Place upside down to drain, on a grill or plate.
- Blend the tuna, anchovies, and capers in a food processor fitted with a blade. Pour mixture into a bowl. Add mayonnaise and mix. Fill the tomatoes with the mixture and put the tops or hats back on tomatoes.
- Refrigerate before serving.
