    Directions

    1. Cut sausage diagonally into 1-inch pieces and cook sausage in a large skillet over medium heat, turning to cook and brown evenly, about 10 to 15 minutes or until internal temperature reaches 160 degrees F. Set aside.
    2. Heat olive oil in a large skillet and add zucchini and red pepper. Cook over medium heat until tender but still crisp, about 3-4 minutes.
    3. Cook the rotini according to the directions on the package. Drain and reserve 1 cup cooking water. Add pasta to skillet and stir in ricotta. Add 1/2 cup pasta water and stir until creamy. Stir in sausage. Add more water if mixture is too dry.
    4. Sprinkle with herbs and Parmesan cheese.

Delicious! I sautés lots of minced garlic before adding the red pepper and zucchini. I also added mushrooms, an Italian seasoning blend and minced onion. Served this with garlic bread. The whole family loved it

Disappointed. It was very bland. I even tried adding garlic, salt and pepper but it still needed something.

This turned out to be a hit! My husband loved it and just kept saying how good it was and my children wanted to take some leftovers home with them. I did add a bit of garlic powder to it just to spruce up the flavor. I also made the zucchini fritters that you can find on Yummly to go with this recipe. Those were amazingly good as well and gave a nice change of texture with this pasta dish.
