- Cut sausage diagonally into 1-inch pieces and cook sausage in a large skillet over medium heat, turning to cook and brown evenly, about 10 to 15 minutes or until internal temperature reaches 160 degrees F. Set aside.
- Heat olive oil in a large skillet and add zucchini and red pepper. Cook over medium heat until tender but still crisp, about 3-4 minutes.
- Cook the rotini according to the directions on the package. Drain and reserve 1 cup cooking water. Add pasta to skillet and stir in ricotta. Add 1/2 cup pasta water and stir until creamy. Stir in sausage. Add more water if mixture is too dry.
- Sprinkle with herbs and Parmesan cheese.

It was pretty good. You have to spice it up a bit- I added several seasonings(such as paprika and Cajun spice to the sausage), thyme, basil, red pepper flakes and oregano (fresh-while cooking; in addition to dried on top) fresh garlic, cooked EVERYTHING in lots of olive oil, and tossed in lemon juice at the end. Also broccoli is a nice addition and some shredded Parmesan to garnish. Do NOT add the 1/2 c of water, it’s not necessary! Just add your ricotta, whether or not you use lemon juice (or white vinegar would also be a good acidic substitute) at the end! Also I once subbed summer squash for zucchini, both are good.

Really good. Didn't need the 1/2 cup of water, it was creamy enough when mixed with the pasta.

We all loved it, even tge kids! I would recommend cooking the sausage first and then cutting it up though.

Delicious! I sautés lots of minced garlic before adding the red pepper and zucchini. I also added mushrooms, an Italian seasoning blend and minced onion. Served this with garlic bread. The whole family loved it

This turned out to be a hit! My husband loved it and just kept saying how good it was and my children wanted to take some leftovers home with them. I did add a bit of garlic powder to it just to spruce up the flavor. I also made the zucchini fritters that you can find on Yummly to go with this recipe. Those were amazingly good as well and gave a nice change of texture with this pasta dish.

We used vegan Italian sausage and added in garlic and mushrooms! The outcome was perfectly delicious!

Amazing. I didn't have ricotta, so i used feta instead and it was still grand.
