- 4 mild Italian sausage (links, or about 1.5 lbs)
- 15 oz. diced tomatoes (drained)
- 15 oz. cannellini beans (drained)
- 1 cup carrots (diced)
- 1 cup diced celery
- 3 cloves garlic (minced)
- 1 zucchini (diced)
- 1/2 bag spinach (you can use more if you would like)
- 64 oz. beef broth (I used 2 32 ounce cartons)
- 1 bay leaf
- 1 tsp. dried rosemary
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1 handful fresh basil (chopped)
- 1 handful fresh parsley (chopped)
- 2 tsp. salt (the sausage and broth already have salt in them so taste before adding salt)
- 1/2 tsp. black pepper
- 1 1/2 Tbsp. flour

I haven't even finished it yet and it already tastes like a winner in my book. I added some potatoes and will probably try to do it with kale instead of spinach next time! Thanks for the recipe. Now I have a great way to use the left over mild sausage I get when making my cast iron skillet pizza bake recipe!
