This was wonderful and super easy. I added about 1/4 of toasted pinenuts for some crunch and served it with a Caesar salad.

It was fabulous, like something you’d get at an Italian restaurant. Pairs great with salad with a vinaigrette. It’s going into the regular meal rotation.

I sautéed garlic in bacon fat in he skillet prior to adding the veggies. Plus I added halved cherry tomatoes at the very end. Delicious!

Delicious and easy ! Reminded me of a mediterranean dish I used to get at Bravo restaurant. Left off the capers, used cheese ravioli, added some white wine to the veggies, tiny amount of the italian spices. Added parm and a small amount of feta cheese to the finished product. Wonderful!!

This recipe is so delicious. It has everything I like; capers, sun-dried tomatoes, artichokes, and spinach. I used vegan mushroom ravioli for the pasta. It was quick and easy to make. I paired it with salad and garlic bread. This will definitely stay in recipe rotation.
