We loved this. I actually did it in the instapot under pressure for 9 minutes, then just stirred in spinach (and added parsley). Shredded grana padana on top.

Very good soup. I added zucchini and substituted the thyme for basil and oregano, simply because I was out of thyme. Served with warm Italian bread.

Excellent recipe! I had plenty of soup to eat and plenty to freeze. The frozen batches later thawed beautifully. My only reason for giving the recipe 4 stars is because I find laboriously long (and not clearly written) instructions unbelievably annoying and narcissistic. Bloggers, please: A) Proof-read.... proofread..... proofread...... and B). Get to the point.

Amazing,everyon loved it, and my family hates lentils lol. Husband even loved it even though it has no meat. I have made it exactly as the recipe states and it’s awesome. I have made it multiple times and have done it half veg half chicken broth (best flavour) and another time only veg broth (healthier). I have also added corn and green beans 👍.

Excellent. Family favourite, the fire roasted tomatoes really made a difference. I have d blended some of the soup before adding the collard greens and added pan fried chorizo for additional flavour.
