  • 5 eggs
  • 1/2 cup milk (better if you have 1/4 cup heavy cream 1/4 cup milk)
  • 3 slices proscuitto (or 3 strips of bacon cut into 1/4 inch pieces)
  • sliced potatoes (handful of leftover hasbrowns or canned)
  • 1 clove garlic (finely chopped)
  • 1/4 cup parmigiano reggiano cheese (freshly grated)
  • 1 handful mozzarella cheese (shredded)
  • 1 tablespoon olive oil
  • fresh basil leaves
  • salt
  • pepper

    Directions

    1. Heat up a 1/2 tablespoon of olive oil and cook bacon/prosciutto/potatoes. Cook until meat is crispy. Then add garlic. Add a pinch of salt.
    2. Scramble eggs with the milk and the parmasean (save some for the topping).
    3. Pour in egg mixture into the skillet. Stir around so that everything is well-distributed.
    4. Top with remaining cheese and basil leaves. Place in oven until bubbly and firm.
