- 1/4 cup butter
- 2 Tbsp. olive oil
- 3 cloves garlic (minced, my addition to this recipe)
- 1 small carrot (finely grated)
- 1/2 onion (medium, finely chopped)
- 1/2 cup chopped celery (finely, and the leaves)
- 6 oz. mild Italian sausage (my addition to this recipe that replaced plain ground pork)
- 6 oz. ground beef
- 6 oz. ground chicken
- 1/3 cup dry white wine
- 1/4 tsp. nutmeg
- red pepper (pinch of cracked, my addition to this recipe)
- sea salt (freshly cracked)
- black pepper
- 1 egg yolk
- 1/2 cup grated Parmesan cheese (freshly-)
- 3 eggs
- 2 cups flour
- 2 cups Italian breadcrumbs
- 1 btl. vegetable oil (for frying)
