This was good but a little bland. Granted, I substituted yogurt for the cream cheese. I am sure cream cheese gives a much richer flavor. Also I use boneless skinless chicken thighs rather than breasts - thighs are much moister and have more flavor. In this recipe the chicken just about melts in your mouth. This is excellent comfort food. Since there isn’t much texture other than the chicken, I included some sliced mushrooms - mushrooms just make everything better!
I added a spoonful of capers to the leftovers which zested it up nicely. Also I used riced cauliflower instead of rice - makes the whole thing healthier and crunchier.
