- 1 large carrot (cleaned and cut into two)
- 1 celery stalk (sliced into two)
- 1 onion (medium, sliced in half, ends removed skin still on)
- 8 cloves onion (the spice to taste, poked into the center of the)
- 1 small tomatoes (or a dash of white wine vinegar, to add acidity)
- 1 sprig sage
- 1 sprig rosemary
- 3 sprigs thyme (2-)
- 1 bay leaf
- 3 Tbsp. salt
- 1 tsp. pepper corns
- 6 cups water (or 1.5L, see instructions)
- 2 lb. beef (I used Round)
- 1/2 cup seasoned bread crumbs (un-, or 50 g, or yolks from three boiled eggs)
- 1/2 cup white wine vinegar (or 75 ml)
- 3 anchovies (optional)
- 1 tsp. capers
- 2 garlic cloves (peeled)
- 4.5 oz. parsley leaves (2 bunches or, 120 g, and stems)
- 1/4 cup olive oil (and more as needed)
- 1 tsp. salt
- black pepper (to taste)
