- 1 coconut (large)
- 3 eggplants (medium sized)
- 1 onion (small, finely chopped)

- 1 medium tomato (pureed)
- 2 tsp. ginger (grated)
- 3/4 tsp. sea salt (unrefined, or to taste)
- 1 Tbsp. curry powder (this curry powder from Jamaica is a MUST)
- 1 tsp. thyme
- 3/4 cup carrots (grated)
- 1 1/4 cups sweet potatoes (mashed, baked)
- 1 dash baking powder
- 1/4 cup flour
- 1/4 cup coconut oil
- 1/4 stick butter
- 1 cup coconut milk (make your own or use full fat canned coconut milk – not the rundown style coconut milk)
- 1/4 cup brown sugar (I substitute raw honey)
- 1/2 grated nutmeg
- 1 piece fresh ginger (grated)
