- 1 zucchini (small, chopped)
- 4 green onions (chopped)
- 1/2 English cucumber (seeds removed, chopped)
- 1/4 sweet onion (chopped)
- 1 red pepper ({or pepper of your choice}, seeds removed and chopped)
- 1/4 cup mint (freshly chopped)
- 1/2 cup fresh parsley (chopped)
