- 2 lb. round steak (cut into cubes)
- 2 1/2 cups heirloom carrots (cut into 1 inch pieces)
- 3 cups purple potatoes (peeled and cut into cubes)
- 2 cups rutabaga (peeled and cut into cubes)
- 1 cup mushrooms (quartered)
- 1 onion (medium, diced)
- 1 Tbsp. worcestershire sauce
- 1 cup beef broth
- 2 cups Guinness Beer
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. pepper (seasoned, blend)
- 2 Tbsp. olive oil
- 3 sprigs fresh thyme (tied with string)
- 1 Tbsp. fresh thyme (for garnish, optional)
- 2 Tbsp. cornstarch
- 2 Tbsp. water
