  • 1 cup irish oats (Instant, Steel Cut Oats)
  • 5 1/2 tablespoons active dry yeast
  • 1 pinch sugar
  • 1/4 cup warm water (105 to 115 degrees F.)
  • 1/4 cup buttermilk (warm, 105 to115 degrees F., I used heavy cream with one Tablespoon Balsamic Vinegar and let it sit until curdled)
  • 1/3 cup raw honey
  • 3 tablespoons oil (I'm using coconut oil)
  • 2 tablespoons unsalted butter (I used coconut oil)
  • 3 eggs
  • 1 tablespoon salt
  • 25 1/2 bread flour (or unbleached all-purpose)
