- 1 1/2 lb. lamb stew meat (or use lamb shoulder or thick cut shoulder chops, cut into 1 1/2 to 2 inch chunks and trimmed of fat)
- 1/4 cup all purpose flour

- pepper
- 4 Tbsp. olive oil (extra virgin - divided into 2 portions of 2 Tbsp each)
- 1 yellow onion (large, rough chopped)
- 2 Tbsp. parsley (fresh, chopped)
- 6 carrots (medium sized, rough chopped)
- 6 celery (ribs, rough chopped)
- 6 cups beef broth (use more or less, as needed to cover your stew ingredients)
- 4 red potatoes (medium, or russet potatoes - chopped)
- 2 bay leaves
- 2 sprigs thyme
