Several of my buddies and my wife and I all love whiskeys. Some prefer Scotch, some bourbon—me, I’m an Irish or rye guy—but we all appreciate all of them. So one of these buddies’ wife decides to host a mini cheesecake competition, just for fun. I knew I had to do a whiskey themed recipe, so I searched and found several, mostly based around bourbon or Irish whiskey. I knew this was the one as soon as I read it. I had to adapt it slightly, mostly just the cooking time (thanks to https://sallysbakingaddiction.com/mini-cheesecakes/ for that) and I definitely had some delicious filling left over, so you could cut back on the filling amounts, probably by 1/4 - 1/3, if you’re doing the minis, in a regular sized muffin pan (I used a silicone cup pan, which made it very easy to get them out.). I also cut the filling baking time by almost 2/3rds—about 24 minutes instead of an hour. I guess, technically, I had extra whiskey caramel sauce too, but as the original poster of the recipe suggested, you can’t really have too much of that, and we managed to use it all. I served it in clear plastic party cups that kinda looked like whiskey glasses, but if you have enough on hand, I think actual whiskey glasses or Old Fashioned glasses would be cool. Anyway, this was my first cheesecake, and it won in the best tasting category, so...
