- 2 cloves garlic (peeled and chopped, if using organic garlic you may want to reduce the amount)
- 3/4 inch ginger (piece, peeled and finely chopped)
- 1 tsp. turmeric
- 1/2 tsp. cayenne pepper
- 1 Tbsp. agave syrup
- 1 5/16 cups coconut milk
- 3 cups water
- 1 cinnamon stick
- 1 cup ground almonds
- 1 lime (Zest and juice of)
- salt (to taste)
- 1 tsp. cumin
- 1 tsp. canela
- 1 tsp. ground nutmeg
- 1 tsp. turmeric
- 1 Tbsp. coconut oil
- 1 onion (medium, peeled and finely chopped)
- 3 eggplants (medium, chopped in square inch pieces)
- 4 garlic cloves (chopped, when using organic garlic, reduce to 2 or 3)
- 1 green pepper (diced finely)
- 1/4 cup orange juice
- 1 cup chickpeas (cooked)
- 1 1/2 cups roasted cashews
- 1 cup dried apricots (chopped)
- 1 cup dates (chopped)
- 2 tomatoes (diced)
- 1 1/2 cups tomato ketchup
- 1 Tbsp. lemon juice
- 2 Tbsp. fresh coriander (chopped)
