- 1 yellow onion (quartered, optional)

The chicken was so juicy and tender. The meat falls of the bones like everyone else says. I used a 6lb bird so I had to increase the mount of spice and cooking time by 10 mns. I served with rice as nd sauteed spinach.
I will definitely make this again.

Ok. Didn’t brown all that well even with 2-3 X recommend sauté time.
Think we’ll stick with Costco rotisserie birds for flavor and half the price.

Tastes exactly right. The only potential issue for some folks is the skin is not crispy. You may want to put it under the broiler to dry the skin a bit if that matters to you. I lifted the chicken and used the trivet; a large sturdy pair of tongs helped with that.

Came out great! Easy recipe, chicken was very moist. Even my husband, who normally won’t eat bone-in chicken, liked this. I saved the carcass and cooking liquid for bone broth (which is cooking in the Instant Pot as I write this). Would definitely make this again.

I was really hoping that this would be a go-to recipe for whole chickens. I followed the directions exactly, except I used the trivet. The flavor was okay but the chicken was rubbery. I will use the rest of the chicken to make a casserole dish or enchiladas. I would definitely do this in the future for that purpose but not to eat as a main dish.
