One of my favorites!!! Great chili, full chili flavor without the meat. I suggest adding chili cheese Fritos to the bottom of your bowl before pouring the chili in your bowl. My family can’t get enough of this!

Tastes wonderful. I make this pretty frequently and no one that i’ve made it for even notices that it’s vegetarian.

My husband and I thought it was good but were not big on “sweet” chili. I may try again with plain potatoes.

I substituted cous cous for quinoa as that was all I had, but it turned out great!

Amazing recipe. The Chipotle powder really does give the dish the depth that it needs. Using all the toppings listed is the perfect way to give it variety of taste, bite after bite.

Turned out really well! I would do yam instead of sweet potatoes next time as I prefer them

Hubby said this was the best chili he’d ever put in his mouth. I have to agree: it was OUTSTANDING. I used just one large sweet potato and one large bell pepper. I added the cheese but it didn’t really need it. The dollop of plain nonfat Greek yogurt on top was essential. Don’t leave it out. The chips finished it off, too. Will make again!
