- 1 tsp. sesame oil
- 1 small sweet onion (chopped)
- 5 large garlic cloves (chopped)
- 1 inch ginger (chopped)
- 3/4 cup white mushroom (sliced, from around 6 medium white mushrooms)
- 1/2 cup carrots (cut into rounds, from 2 medium carrots)
- 5 oz. tofu (cubed, extra-firm, around 3/4 cup tofu cubes)
- 1 Tbsp. Thai red curry paste (or add more to taste)
- 1 Tbsp. tamari (or use soy sauce)
- 1 tsp. rice vinegar
- 1 Tbsp. brown sugar
- 2 1/2 cups water (or vegetable broth)
- salt (to taste)
- 14 oz. coconut milk
- 1 red bell pepper (medium, sliced)
- 1 lime (juice of)
- 2 Tbsp. chopped cilantro

Really good and easy. I used green curry paste and added more (approx 4tbsp) since it was mild. I also added tatsoi at end with red peppers and 1/2 can lemongrass-ginger coconut milk. I also used vegetable broth and no salt Served with coconut rice. I think you can use light coconut milk.
