This was very yummy! I didnt change a thing and shared it with a vegan co-worker and she loved it! It was very hearty too!

Fantastic recipe! This was dinner tonight, and I really think everything worked in perfect harmony. I was pretty faithful to the original recipe, but I substituted Better Than Bullion for an actual bullion cube, chopped the onion a bit more coarsely, and added a tiny bit more cayenne. I'm glad I've got leftovers; I think this might be one of my go-to soups. I might try a little more coconut milk next time as well, even though I'm not a huge fan of coconut.
