- 1 cup water
- 1 Tbsp. fresh parsley (or chives, minced)
- 1 cup soy curls (Butler, ™, soaked in boiling water for 10 minutes)
- 1 Tbsp. liquid aminos (Bragg's, or tamari sauce)
- 1/2 tsp. Italian seasoning
- 2 Tbsp. oil (coconut, avocado, grape seed)
- 1 medium onion (chopped)
- 4 cloves garlic (chopped)
- 2 stalks celery (chopped)
- 2 medium carrots (peeled and chopped)
- 2 Tbsp. all purpose gluten free flour
- 1/2 cup unsweetened almond milk
- 4 cups vegetable broth
- 1 tsp. dried thyme leaves
- 2 Tbsp. nutritional yeast flakes
- 1 bay leaf
- 1/2 tsp. salt

Winner, winner chicken dinner! This is the first meal in a long time that even the pickiest among us said I should make again. Next time I will add the sautéed soy curls after pressure cooking - I thought they were soggy. I will add a pinch of nutmeg to the dumpling dough, too.
